What is Gelato?
Gelato is the Italian word for “frozen” and is used to describe Italian ice cream. Gelato though is quite different from American ice cream in several ways.
The first thing that is noticeably different is that gelato is served at a slightly higher temperature than American ice cream, typically 10 – 15 degrees warmer, this allows the palate to savor the rich flavors as it melts in your mouth.
Second, gelato is much denser than traditional ice cream because it has less air that is mixed in because it is spun at a slower speed. This is what gives gelato its richness and creaminess and makes it a higher quality ice cream over traditional American ice cream, and more flavorful.
The last thing is gelato’s butterfat content. Gelato’s butterfat content is generally between 0% - 8% compared to that of 12% - 26% in the US. Therefore less calories and less fat without sacrificing flavor or quality.
